The Des Moines Register reports the Meatless Mondays campaign is gaining ground as food service giant Sodexo joins the campaign.
Sodexo has already encouraged meatless options on Mondays in hospitals and will soon add college and university customers to its list. According to Sidney Lerner, an advertising executive who initiated Meatless Mondays seven years ago, a second large food service supplier will join the campaign shortly.
The campaign has picked up momentum as some consumers perceive livestock farms as a major contributor of greenhouse gas emissions, making the consumption of meat harmful to the environment.
The biggest threat to meat consumption could be rising corn prices which has led to Increased meat prices. Beef consumption has dropped from 68 to 59 pounds per person from 2000 to 2010, pork consumption has dropped from 51 to 47 pounds per person over the same time period.
The American Meat Institute argues meat is a necessity for proper nutrition.
