With plenty of protein in the retail meat case, the competition is tough. So, enticing consumers with new offerings is one way to motivate purchases. With that in mind, the National Pork Board is talking to retailers about four new boneless pork cuts. They include:
1) Pork Shoulder Breast
2) Pork Shoulder Petite Tender
3) Pork Leg Cap Steak
4) Pork Leg Sirloin Tip Roast
“The research started in 2004, and these cuts were introduced in the foodservice industry, but we’re now focusing on the retail market,” says Jarrod Sutton, NPB’s director of retail marketing. “Food trends typically begin in foodservice and, with success, will carry over to the retail meat case as consumers gain confidence in preparation techniques at home.”
NPB presented the cuts to the industry-wide Cooperative Meat Identification Standards Committee, a national group of retailers and meat industry executives charged with ensuring consistency in retail meat purchasing. The committee fully endorsed the four new pork cuts and approved their naming conventions and UPC codes. That action should help get the cuts placed in grocers’ meat cases, Sutton notes.
“While product availability and consumer demand are kind of a ‘chicken-and-egg’ situation, we’re starting to connect the dots between packer/processors and the retailers,” he adds. “We may not see these cuts in the meat case tomorrow, but we will in the very near future.”
