Chicago Meat Authority has rolled out Chipotle Pork Fajita Strips. The Chicago-based processor is marketing the product as a healthier alternative to beef fajitas, which is an attractive price point for foodservice operators.

The pork strips measure 0.5 inches by 0.5 inches by 3 inches and are cut from lean, boneless pork and marinated with CMA's chipotle marinade. The product is vacuum-packed in 2.5-pound frozen bags, with four bags shipping in a 10-pound case. The product is grill-ready and designed to be ideal for quick-cook applications, accordign to company officials.

"With the current economic conditions, Pork Fajita Strips allow operators to offer their customers a fajita option that is less expensive than beef and chicken," says Luke Gorksi, CMA account manager.
