Recent demand trends indicate that niche pork's market-share potential may be as high as 25 percent of the fresh pork market. A Pork Checkoff-funded niche pork study asked 200 pork consumers to rate the importance of various combinations of niche pork attributes. The survey found, for example, that the market share potential of niche pork at a 40 percent premium that's certified Berkshire and raised without antibiotics, growth promotants and animal byproducts is 22.5 percent. This number dropped slightly to 20.5 percent when the Berkshire breed is not specified.
