Though neighborhood butcher shops had gone by the wayside in recent years, specialty shops are making a resurgence.
With consumers’ renewed interest in where their food comes from and how it’s produced, craft butcher shops are gaining a foothold in cities across the country. New butcher programs and shops are focusing in on transparency and building awareness and knowledge about better meat, while providing an outlet for local farmers to sell their animals.
Though the interest is present in cities for craft butcher shops, what about the price? Usually such places are located in high-income urban neighborhoods and pricing finds its place at almost twice the price of conventional meat; similar to the difference in shopping at Whole Foods instead of Walmart.
Some shops, like Fleishers of New York City, focus on educating customers about how to utilize cheaper cuts of meat, instead of directing them straight to the high-price cuts.
